STYLE / HISTORY
The Berlin oak is the first variation of our Budike, ahead of raspberry and woodruff. Strictly speaking, a wood-stored white beer is actually the most original form of the Berlin sour beer specialty. Because in the 16th and 17th centuries, in the time of their creation, the wort was boiled in copper kettles, but the beer was then stored and matured in wooden vats and barrels.
We were inspired by that. Our Budike Weisse, which we brew according to historical models with special yeasts (including Brettanomyces) and lactic acid cultures, first ripens on wood and then in the bottle. We tried many different woods and toasting grades to find out which flavors go best with the fruity acidity. Its name already gives it away: Our whites are perfectly balanced by heavily toasted oak. So it's all the more beautiful that this tree species is also native to Berlin - so real Berlin refreshment. Treat yourself to a treat!
The Berlin oak pearls light yellow in the glass, apple and citrus fruits resonate in the scent. This is accompanied by a touch of honey and the vanilla aromas of the toasted oak wood. Fresh and balanced in the drink, the fine tannins of the wood lie velvety on the palate and tongue. Spicy finale. The Berlin oak ends with slightly smoky notes.
